Lighter Chocolate Cake

- Preheat oven to 300*.
- Line bottom of a 8" round cake pan with parchment paper.
- In a medium bowl, beat the egg whites at medium speed until frothy.
- Slowly beat in the granulated sugar, 1 tablespoon at a time, until soft peaks form.
- Fold in vanilla.
- Combine flour and 3 tablespoons cocoa powder in a small bowl.
- Sprinkle over beaten egg whites, half at a time, gently folding in until it is just absorbed.
- Spoon into baking pan and smooth the top.
- Bake 30 minutes - until top springs back when lightly pressed.
- Sprinkle icing sugar on a clean tea towel.
- Turn the cake out of the pan onto the towel & peel off the parchment paper.
- Cool completely.
- TOPPING:.
- Combine Cool Whip and chocolate syrup until blended.
- Spread over top & sides of cake.
- Sprinkle with remaining 1 tablespoon cocoa powder.
