Lighter Chocolate Cake

Ingredients

  • 5 egg whites
  • 12 cup granulated sugar
  • 12 teaspoon vanilla extract
  • 13 cup cake flour (you can use a-p flour)
  • 4 tablespoons unsweetened cocoa powder
  • 1 12 teaspoons icing sugar
  • 23 cup Cool Whip

Instructions

  1. Preheat oven to 300*.
  2. Line bottom of a 8" round cake pan with parchment paper.
  3. In a medium bowl, beat the egg whites at medium speed until frothy.
  4. Slowly beat in the granulated sugar, 1 tablespoon at a time, until soft peaks form.
  5. Fold in vanilla.
  6. Combine flour and 3 tablespoons cocoa powder in a small bowl.
  7. Sprinkle over beaten egg whites, half at a time, gently folding in until it is just absorbed.
  8. Spoon into baking pan and smooth the top.
  9. Bake 30 minutes - until top springs back when lightly pressed.
  10. Sprinkle icing sugar on a clean tea towel.
  11. Turn the cake out of the pan onto the towel & peel off the parchment paper.
  12. Cool completely.
  13. TOPPING:.
  14. Combine Cool Whip and chocolate syrup until blended.
  15. Spread over top & sides of cake.
  16. Sprinkle with remaining 1 tablespoon cocoa powder.
