Ingredients

  • 2/3 cup sugar
  • 1/3 cup frozen lemonade concentrate
  • 1 envelope unflavored gelatin
  • 2 eggs
  • 2 tablespoons cornstarch
  • 1 cup fresh raspberries
  • 1 1/4 cups water

Instructions

  1. In a small saucepan, stir 1/2 cup sugar, cornstarch, and gelatin until well blended.
  2. Stir in water.
  3. Cook over high heat, stirring constantly, until mixture boils.
  4. Remove from heat.
  5. Pour half the hot sugar mixture into the beaten eggs.
  6. Stir until well blended.
  7. Pour the egg mixture into the remaining hot sugar mixture; stir until blended.
  8. Reduce heat very low.
  9. Cook, stirring constantly, until mixture starts to bubble at edges.
  10. Remove from heat.
  11. Stir in frozen lemonade concentrate.
  12. Cover and chill until firm (overnight).
  13. Blend the remaining sugar and fresh raspberries.
  14. Garnish the custard with the blended berries.
