Ingredients

  • juice from crushed pineapple
  • water
  • 1 (3 oz.) pkg. lemon gelatin
  • 1 1/2 cups miniature or diced marshmallows
  • 8 oz. pkg. cream cheese
  • 1/2 pint whipping cream
  • 2 tablespoons sugar
  • 1/4 teaspoon vanilla
  • 1 can crushed pineapple (2 1/2 cups)
  • 2 cups water
  • 2 (3 oz.) packages raspberry gelatin

Instructions

  1. Dissolve lemon gelatin in boiling pineapple juice and water.
  2. Pour the dissolved gelatin over marshmallows and cream cheese in a bowl.
  3. Beat the mixture with a mixer until smooth.
  4. Whip the cream, then add sugar and vanilla, and fold into the gelatin mixture.
  5. Add crushed pineapple to the mixture and pour into a 9 x 13-inch pan.
  6. Allow the first layer to set in the refrigerator.
  7. Dissolve raspberry gelatin in two cups of boiling water.
  8. Add thawed raspberries to the raspberry gelatin and let cool.
  9. Spoon the raspberry mixture over the first layer.
  10. Refrigerate and let the dessert set before serving.
