Lime Pickle

Ingredients

  • 1 gal. sliced cucumbers
  • 1 c. lime
  • 1 qt. vinegar
  • 1 Tbsp. pickling salt
  • 1/2 box pickling spice
  • 6 1/2 c. sugar

Instructions

  1. Mix cucumbers and lime; cover with water and stir.
  2. Let stand 24 hours.
  3. Drain and wash 3 times.
  4. Let stand in ice water 3 hours.
  5. Drain off water.
  6. Mix vinegar, salt, spices and sugar. Pour over cucumbers.
  7. Let stand 24 hours.
  8. Bring to a boil; boil slowly until they turn dark green.
