Ingredients

  • 8 1/2 oz. package Jiffy corn bread mix
  • 4 medium tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 9 slices bacon, cooked and crumbled
  • 1 cup Miracle Whip or mayonnaise
  • 1/2 cup homemade sweet pickle juice

Instructions

  1. Cook the cornbread mix according to the package directions and let it cool.
  2. Crumble the cooled cornbread and set aside.
  3. Chop the tomatoes, green bell pepper, and onion.
  4. Combine the chopped vegetables and toss.
  5. Mix the Miracle Whip or mayonnaise with the sweet pickle juice.
  6. Add the crumbled cornbread to the vegetable mixture.
  7. Pour the dressing over the mixture and toss to combine.
  8. Chill the salad for at least two hours before serving.
