Ingredients

  • 1 envelope Knox unflavored gelatine
  • 1/4 cup cold water
  • 1 (16 oz.) can lite peaches, drained
  • Reserve peach juice from can
  • 1 (8 oz.) package lite cream cheese, softened
  • 1/4 cup sugar

Instructions

  1. In blender, sprinkle gelatine over cold water; let stand 2 minutes.
  2. In a small saucepan, bring reserved peach juice to a boil.
  3. Add hot peach juice to the blender and process at low until gelatine is completely dissolved (about 2 minutes).
  4. Add remaining ingredients and process at high until blended.
  5. Pour mixture into an 8 x 9-inch pie pan or prepared crust with 3/4 cup graham cracker crumbs and 2 tablespoons melted butter.
  6. Chill until firm, about 3 hours.
  7. Garnish with peaches before serving.
