- In blender, sprinkle gelatine over cold water; let stand 2 minutes.
- In a small saucepan, bring reserved peach juice to a boil.
- Add hot peach juice to the blender and process at low until gelatine is completely dissolved (about 2 minutes).
- Add remaining ingredients and process at high until blended.
- Pour mixture into an 8 x 9-inch pie pan or prepared crust with 3/4 cup graham cracker crumbs and 2 tablespoons melted butter.
- Chill until firm, about 3 hours.
- Garnish with peaches before serving.
