Lo-Cal Chicken Rellenos

Ingredients

  • 4 chicken breasts, skinned and boned
  • 2 Tbsp. + 2 tsp. oil
  • 3 Tbsp. flour
  • 1 large onion, chopped
  • 2 cans Mexican style tomatoes
  • 2 cloves garlic, minced
  • salt and pepper to taste
  • 1 small can whole green chilies

Instructions

  1. Coat chicken in flour and saute in oil until light brown.
  2. Add a little water or chicken broth and simmer until done.
  3. In another pan, simmer onion and garlic with tomatoes until onion is soft and tomatoes start to thicken.
