Loaded Egg Sandwich

Ingredients

  • 2 farm fresh eggs
  • 2 slices of crisp smoked bacon
  • 2 slices of Vermont cheddar cheese
  • 3 ounces caramelized onions
  • 2 slices of brioche
  • 4 ounces hash brown potatoes
  • 2 ounces Sriracha Mayo
  • 1 leaf of lettuce

Instructions

  1. Cook your hash browns in a pan until they are cooked through and reach a perfect golden brown.
  2. Toast or grill the brioche until it is lightly browned.
  3. Spread both slices of brioche with the Sriracha Mayo.
  4. Prepare the eggs to your liking. Chef Eddie recommends over easy (his personal favorite)!
  5. Melt the cheddar cheese on top of your eggs for one minute.
  6. Build your sandwich, cut in half and enjoy!
