A hearty vegetable soup combining frozen vegetables, potatoes, and tomatoes, perfect for a comforting, wholesome meal that suits all ages and tastes.

Ingredients

  • 2 lb. frozen mixed vegetables
  • 1 1/2 qt. tomatoes
  • 8 medium potatoes, sliced
  • salt and pepper to taste
  • 1 medium onion
  • 1 Tbsp. shortening and margarine
  • 6 to 8 cups water

Instructions

  1. Rinse the frozen mixed vegetables.
  2. Combine all ingredients in a large cooking pot on medium heat.
  3. Cook for 45 minutes to 1 hour.
  4. Then simmer the soup for another 45 minutes to an hour.
  5. Serve hot with cornbread.
