A delicate sponge cake with a light, airy texture, subtly flavored with vanilla and topped with confectioners sugar, perfect for elegant desserts or teatime treats.

Ingredients

  • 1 cup sifted confectioners sugar
  • 2/3 cup sifted cornstarch
  • 3 large eggs
  • 1/8 teaspoon cream of tartar
  • 2 tablespoons water
  • 1/2 teaspoon vanilla

Instructions

  1. On waxed paper, sift together 1/2 cup of the confectioners sugar and the cornstarch three times.
  2. In a large bowl, beat the egg whites, cream of tartar, and water until soft peaks form.
  3. Add the egg yolks and vanilla to the egg whites mixture.
  4. Beat just until blended.
  5. Fold in the sifted sugar and cornstarch mixture a little at a time until no dry particles remain.
  6. Divide the batter evenly into two ungreased 8-inch round cake pans with 1 1/4-inch depth.
  7. Bake in a preheated 350°F oven for about 30 minutes until the top springs back when lightly touched.
  8. Cool the cakes in the pans on wire racks.
  9. Loosen the edges and carefully ease out the cakes.
  10. Fill with jam.
  11. Sprinkle confectioners sugar on top before serving.
