Loquat Compote

Instructions
- Drain the loquats and reserve the syrup.
- Add plum wine to the loquats and marinate for 15 minutes.
- Pour the loquat syrup into a saucepan, heat to boiling, and boil to reduce to half the volume.
- Combine the marinated loquats with the reduced syrup and add the liqueur, stirring well.
- Add the chopped almonds and stir to combine.
- Serve as a dessert or side dish with curry, fish, pork, or poultry.
