Loquat Compote

A sweet and tangy loquat compote infused with orange liqueur and almonds, perfect as a dessert or accompaniment to curries, fish, pork, or poultry dishes.

Ingredients

  • 7.5 oz. can loquats, drained
  • 1 Tbsp. Mandarin Napoleon liqueur or Grand Marnier
  • 1/2 Tbsp. blanched almonds, chopped
  • 1/3 cup plum wine

Instructions

  1. Drain the loquats and reserve the syrup.
  2. Add plum wine to the loquats and marinate for 15 minutes.
  3. Pour the loquat syrup into a saucepan, heat to boiling, and boil to reduce to half the volume.
  4. Combine the marinated loquats with the reduced syrup and add the liqueur, stirring well.
  5. Add the chopped almonds and stir to combine.
  6. Serve as a dessert or side dish with curry, fish, pork, or poultry.
