Ingredients

  • 3 garlic cloves (peeled)
  • 1 tablespoon paprika
  • 1 14 teaspoons crushed red pepper flakes
  • sea salt (to taste)
  • 6 tablespoons olive oil
  • 1 lb pork (cubed)
  • 6 tablespoons olive oil
  • 1 onion (minced)
  • 1 cup dry white wine

Instructions

  1. In a food processor combine the garlic, paprika, pepper flakes and salt.
  2. Puree, adding oil until smooth.
  3. Pour over pork.
  4. Coat well.
  5. Cover.
  6. Chill 24 hours.
  7. Heat oil in a skillet over high heat.
  8. Add pork and marinade.
  9. Cook over high until pork is no longer pink.
  10. Transfer with a slotted spoon to a bowl.
  11. To pan add onion.
  12. Cook over high for 5 minutes.
  13. Add wine.
  14. Reduce heat.
  15. Cook 10 minutes.
  16. Return pork.
  17. Add clams.
  18. Heat through.
  19. Season to taste if needed.
  20. Top with parsley.
