Ingredients

  • 3 lb. boneless chuck roast
  • 1 cup low-carb barbecue sauce
  • 1/2 cup sugar-free apricot preserves
  • 1 Tbsp. Dijon mustard
  • 2 tsp. packed brown sugar
  • 1 onion

Instructions

  1. Remove excess fat from beef and cut into 4 pieces.
  2. Place beef in a 4 to 5-quart slow cooker.
  3. Mix barbecue sauce, apricot preserves, Dijon mustard, brown sugar, and onion; pour over beef.
  4. Cover and cook on low heat for 7 to 8 hours or until beef is tender.
  5. Remove beef from slow cooker, cut into thin slices or shred.
  6. Stir beef back into the sauce.
  7. Cover and cook for an additional 20 to 30 minutes or until beef is hot.
  8. Serve on low-carb buns or alone with sugar-free coleslaw.
