Ingredients

  • 12 vanilla wafers
  • 2 (8 oz.) no-fat cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • egg substitute equal to 2 eggs
  • 1 package frozen strawberries, thawed

Instructions

  1. Line 12 muffin pans with paper liners.
  2. Place a vanilla wafer in the bottom of each cup.
  3. Beat softened no-fat cream cheese, sugar, and vanilla with a mixer until smooth.
  4. Add egg substitute equal to 2 eggs and mix well.
  5. Fill each cupcake cup with the cream cheese mixture.
  6. Bake for 25 minutes at 325°F (160°C).
  7. Allow to cool before serving.
  8. Serve with thawed strawberries on top.
