Ingredients

  • 4 cups cooked yellow squash, drained and lightly mashed
  • 1 stick butter, melted
  • 2 eggs, beaten
  • 1 cup chopped onion
  • 3 tablespoons chopped sweet red pepper
  • 1 cup grated mild Cheddar cheese
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1 cup milk

Instructions

  1. Preheat oven to 375°F.
  2. Combine cooked yellow squash, melted butter, beaten eggs, chopped onion, chopped red pepper, grated cheese, black pepper, salt, and milk in a mixing bowl.
  3. Pour the mixture into a casserole dish sprayed with vegetable coating.
  4. Sprinkle with additional herb stuffing if desired.
  5. Bake at 375°F for 40 to 45 minutes until bubbly and golden.
