Light and indulgent mini eclairs with vanilla and chocolate pudding, topped with Cool Whip Lite, perfect for a low-fat treat that satisfies your sweet tooth.

Ingredients

  • 8 ladyfingers
  • 1 package sugar free vanilla pudding (half used)
  • 1 package sugar free chocolate pudding (half used)
  • 1 cup skim milk

Instructions

  1. Prepare the vanilla and chocolate pudding mixes in separate containers, using skim milk instead of water.
  2. Split each ladyfinger in half crosswise.
  3. Spread 1 tablespoon of vanilla pudding on the bottom half of each ladyfingers.
  4. Place the top half of the ladyfingers over the pudding to form an eclair shape.
  5. Spread 1 tablespoon of chocolate pudding on top of each eclair.
  6. Drop 1 teaspoon of Cool Whip Lite in the center of each eclair.
  7. Chill before serving.
