- Preheat oven to 450°.
- In a large bowl, beat the eggs.
- Add the buttermilk, milk, vegetable oil and margarine.
- Add the sugar, flour and cornmeal, mixing just until combined.
- This may be baked in muffin tins (8 to 10 minutes) or in iron skillets which have been heated in the oven (15 to 20 minutes for a 12-inch skillet). It may also be cooked on a griddle.
- May be made 30 minutes or more before cooking.
