Macadamia Nut Bread

Ingredients

  • 1 (20 oz.) can crushed pineapple, drained
  • 1 (3 to 4 oz.) jar Macadamia nuts, chopped
  • 1 c. coconut
  • 3/4 c. flour
  • 1/2 tsp. baking powder
  • 3/4 c. sugar
  • 3 eggs
  • 1 tsp. vanilla

Instructions

  1. Grease 3 mini loaf pans or 1 large loaf pan and line with paper.
  2. In a large bowl, mix pineapple, nuts and coconut.
  3. Sift flour and baking powder over nut mixture.
  4. Put sugar over mixture and mix gently until coated.
  5. Beat 3 eggs in a small bowl until foamy.
  6. Stir in vanilla.
  7. Pour over nut mixture and stir until well mixed.
  8. Spoon in desired pans.
  9. Bake 60 to 70 minutes in a 300° oven.
  10. Remove from oven and turn out on wire racks.
  11. Let cool and wrap in foil.
  12. Keep 4 days in refrigerator before serving.
