Macadamia Nut Bread

Instructions
- Grease 3 mini loaf pans or 1 large loaf pan and line with paper.
- In a large bowl, mix pineapple, nuts and coconut.
- Sift flour and baking powder over nut mixture.
- Put sugar over mixture and mix gently until coated.
- Beat 3 eggs in a small bowl until foamy.
- Stir in vanilla.
- Pour over nut mixture and stir until well mixed.
- Spoon in desired pans.
- Bake 60 to 70 minutes in a 300° oven.
- Remove from oven and turn out on wire racks.
- Let cool and wrap in foil.
- Keep 4 days in refrigerator before serving.
