Ingredients

  • 2 Tbsp. butter
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 2 2/3 cups shredded coconut

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Melt the butter and remove from heat.
  3. Mix in salt, vanilla, sugar, and well-beaten eggs.
  4. Stir in the shredded coconut.
  5. Drop by teaspoons onto a greased cookie sheet.
  6. Bake for 15 minutes or until golden brown.
