Ingredients

  • 2 1/2 cups milk
  • 1 egg
  • 3 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg

Instructions

  1. Warm the milk but do not scald it.
  2. Separate the egg and beat the egg white until stiff.
  3. Beat in sugar, vanilla, salt, and nutmeg into the egg yolk.
  4. Combine the egg yolk mixture with the three eggs.
  5. Gently stir in the beaten egg white, just enough to blend.
  6. Add the warm milk gradually, stirring until the sugar seems dissolved.
  7. Pour the mixture into an unbaked pie crust.
  8. Bake in a preheated 475°F oven, then reduce the temperature to 425°F.
  9. Bake for 30 minutes until set.
