Creamy mango ginger parfaits combine smooth vanilla ice cream with fresh mango and candied ginger, creating a refreshing dessert perfect for warm days or special occasions.

Ingredients

  • 1 gallon vanilla ice cream
  • 6 oz fresh mango puree
  • 1 Tbsp cumquat juice
  • 2 Tbsp candied or crystallized ginger, finely chopped
  • whipping cream
  • fresh mango slices

Instructions

  1. Soften the vanilla ice cream.
  2. Mix in the fresh mango puree and cumquat juice.
  3. Pour the mixture into a mold and freeze for 2 hours.
  4. Unmold the frozen mixture and place it in a blender.
  5. Add finely chopped candied or crystallized ginger to the blender and blend well.
  6. Return the mixture to the mold and refreeze until firm.
  7. Garnish with whipped cream and fresh mango slices before serving.
