Ingredients

  • 2 c. orange juice
  • 1 lemon (juice and rind)
  • 2 Tbsp. plain gelatin
  • 2/3 c. sugar
  • 1 pt. heavy cream or Cool Whip

Instructions

  1. Mix the plain gelatin with a little water to soften.
  2. Add orange juice, lemon juice and rind, and sugar; stir until well combined.
  3. Pour the mixture into an ice cube tray and freeze until almost hard.
  4. Remove from freezer and top with whipped cream or Cool Whip.
  5. Sprinkle with a little confectioners sugar and chopped walnuts.
  6. Place back in the freezer until fully frozen and ready to serve.

Tips & Substitutions

To ensure the gelatin dissolves properly, mix it with warm water before adding it to the juice mixture. For a lighter option, consider substituting heavy cream with a dairy-free whipped topping. If you prefer a sweeter dessert, increase the sugar slightly. You can also add fresh fruit, like berries, for extra flavor and texture.

Serving Suggestions

Serve the Manhattan Pudding as an elegant dessert at your next gathering, perhaps after a main dish like Herbed Tomato Quiche. It pairs beautifully with a fresh fruit salad or a light sorbet. Garnish with additional chopped walnuts and a drizzle of sauce for added flair.

Storage & Reheating

Store any leftover Manhattan Pudding in an airtight container in the freezer. It can last for up to a month. To serve, simply remove from the freezer and let it sit at room temperature for a few minutes to soften slightly before scooping. Avoid reheating as it may alter the texture.

Frequently Asked Questions

Can I use another type of juice instead of orange?

Yes, you can experiment with other fruit juices such as pineapple or cranberry for a different flavor profile. Keep in mind that the sweetness and acidity may vary, so adjust the sugar accordingly to achieve the desired taste.

How can I make this recipe vegan?

To make a vegan version, substitute plain gelatin with agar-agar and use a plant-based whipped topping instead of heavy cream. Ensure that your sugar is vegan-friendly, as some sugars are processed with bone char.

Can I prepare this dessert in advance?

Absolutely! Manhattan Pudding can be made a day or two in advance. Just prepare it according to the recipe, freeze it, and it will be ready to serve when you need it. Just remember to let it soften slightly before serving.
