Ingredients

  • 4 tomatoes
  • 1 small white onion
  • 1 stalk celery
  • 1 small green pepper
  • 1/4 c. olive oil
  • 2 to 3 Tbsp. chopped green chiles
  • 2 Tbsp. red wine vinegar
  • 1 tsp. mustard seed
  • 1/2 to 1 tsp. coriander

Instructions

  1. Peel tomatoes and finely chop.
  2. Finely dice onion, celery and green pepper.
  3. Stir all ingredients together.
  4. Cover and chill several hours or overnight, stirring occasionally.
