Instructions
- 1. Saute the onion with oil in skillet over medium heat for 6 minutes.
- 2. Add cubes of chicken and increase heat to medium high until browned lightly for about 7 minutes.
- 3. Add rice to skillet, stir, then add tomato puree. Add salt and simmer gently for 30 minutes stirring often and adding water if necessary.
- 4. Add pepper to taste.
