Marshmallow Coconut Bars

- Preheat the oven to 400°F. Grease a foil-lined 11 x 7 inch baking pan, with foil extending at long sides for handles.
- Beat butter and sugar in a medium bowl with an electric mixer until pale and creamy. Beat in egg yolk. Fold in combined sifted flours. Press into prepared pan.
- Bake 10 mins. Spread jam on crust. Bake for a further 5 mins. Reduce oven temperature to 350°F. Arrange marshmallows in alternate colors on jam. Return to oven for 8-10 mins, until soft. Remove from oven and sprinkle with coconut while hot. Cool in pan on a wire rack. Cut into bars to serve.
