Marshmallow Coconut Bars

Ingredients

  • 4 tbsp (1/2 stick) butter, chopped, at room temperature
  • 1/3 cup sugar
  • 1 None egg yolk
  • 1/2 cup flour
  • 2 tbsp self-rising flour
  • 1/3 cup strawberry jam
  • 9 oz pink and white marshmallows

Instructions

  1. Preheat the oven to 400°F. Grease a foil-lined 11 x 7 inch baking pan, with foil extending at long sides for handles.
  2. Beat butter and sugar in a medium bowl with an electric mixer until pale and creamy. Beat in egg yolk. Fold in combined sifted flours. Press into prepared pan.
  3. Bake 10 mins. Spread jam on crust. Bake for a further 5 mins. Reduce oven temperature to 350°F. Arrange marshmallows in alternate colors on jam. Return to oven for 8-10 mins, until soft. Remove from oven and sprinkle with coconut while hot. Cool in pan on a wire rack. Cut into bars to serve.
