Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2 cups flour
  • 3 to 4 cups pecans
  • 2 pounds candied pineapple
  • 2 pounds candied cherries
  • 2 cans Angel Flake coconut

Instructions

  1. Beat the eggs in a mixing bowl.
  2. Add sugar and beat again until well combined.
  3. Dredge the candied pineapple, candied cherries, and pecans in 1 cup of flour.
  4. Add the floured fruit and nuts to the egg and sugar mixture.
  5. Gradually add 2 cups of flour and mix well.
  6. Pour the batter into a greased and floured pan.
  7. Bake at 250°F (120°C) for 1 1/2 to 2 hours until a toothpick inserted in the center comes out clean.
