Ingredients

  • 4 cups mashed cooked carrots
  • 1 1/2 cups water from carrots
  • 16 Ritz crackers
  • 3 tablespoons minced onion
  • 2/3 cup grated yellow cheese
  • 3 tablespoons cream
  • salt and pepper

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine mashed cooked carrots, water from carrots, rolled Ritz crackers, minced onion, grated yellow cheese, cream, salt, and pepper.
  3. Mix all ingredients thoroughly until well combined.
  4. Transfer the mixture into a baking dish.
  5. Bake at 350°F for 25 minutes until heated through and golden on top.
