Ingredients

  • 5 cups sliced potatoes
  • 1 medium onion
  • 2 teaspoons salt
  • 3 tablespoons butter
  • 2 2/3 cups milk

Instructions

  1. Put sliced potatoes and the medium onion into a 3-quart saucepan and barely cover with cold water.
  2. Add salt to the saucepan.
  3. Cover tightly and heat to boiling. Reduce heat and simmer for 10 minutes or until potatoes are perfectly tender.
  4. Mash potatoes in their liquid until smooth.
  5. Add butter and enough milk to achieve desired thickness.
  6. Reheat the soup to scalding, then remove from heat.
