Ingredients

  • 1 chicken
  • 1 Tbsp. peppercorns
  • 1 Tbsp. coarse kosher salt
  • 8 oz. small white or baby portabella mushrooms
  • 2 Tbsp. butter

Instructions

  1. Cover the chicken with water in a large stock pan.
  2. Add salt and peppercorns to the water.
  3. Simmer the chicken on low heat for several hours until cooked.
  4. Remove the cooked chicken from the pot and set aside.
  5. Cool the broth in the refrigerator and skim off the fat.
  6. Sauté sliced mushrooms in butter until golden brown.
  7. Add the sautéed mushrooms to the defatted broth.
