Meatball With Eggplant

Ingredients

  • 2 lb. ground beef
  • 1 eggplant, cooked in salt water for 2 minutes
  • 2 cloves garlic
  • 1 egg
  • 2 c. Monterey Jack cheese
  • salt and pepper
  • 16 oz. tomato sauce

Instructions

  1. Mix all ingredients, reserving 1 1/2 cups cheese.
  2. Bake in oven for 1 hour.
  3. Top with cheese.
  4. Bake 1/2 hour longer.
