Ingredients

  • 1 loaf whole wheat bread, cut into 1/2-inch cubes
  • 3 eggs
  • 1/4 to 1/2 cup milk
  • 1/3 cup freshly grated Parmesan or Romano cheese
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Beat the eggs in a large bowl.
  2. Add milk and remaining ingredients except bread. Mix well.
  3. Add bread cubes and mix with wet hands to form balls, pressing lightly to eliminate cube shape.
  4. If the mixture is too dry, add more milk.
  5. Lightly brown the meatballs in oil (Mazola or olive) until golden.
  6. Drain on paper towels before serving.
