Ingredients

  • 12 to 14 oz. small red beans
  • water
  • 1/3 pkg. chili mix
  • 2 cloves garlic, chopped
  • 1 medium size onion
  • salt
  • 5 to 6 dashes mesquite liquid smoke
  • hot Louisiana sauce (optional)

Instructions

  1. Cover beans with water plus 2 inches more and soak for 10 to 12 hours.
  2. Put soaked beans into a slow cooker.
  3. Add water to cover the beans plus 2 inches more.
  4. Add chili mix, chopped garlic, and chopped onion to the slow cooker.
  5. Cook for 4 to 5 hours.
  6. After 4 to 5 hours, add mesquite liquid smoke and hot sauce if desired.
  7. When beans are done, add salt to taste.
  8. Do not heat beans in the microwave as they can become hard.
