Mediterranean Beef Rolls

Ingredients

  • 8 slices thin-sliced top round steak
  • 4 slices pancetta, halved
  • 1 None red pepper, roasted, cut into 8 pieces
  • 16 large basil leaves
  • 1 tbsp olive oil
  • 1 jar (24 oz) marinara sauce
  • 1/2 cup black olives
  • None None Cooked orzo, arugula leaves, to serve

Instructions

  1. Top each steak slice with a piece of pancetta, 1 slice pepper and 2 basil leaves. Season to taste. Roll up and secure with a toothpick.
  2. Heat oil in a large skillet on high heat. Cook beef rolls for 5 mins, turning, until browned on all sides. Finish seam-side down.
  3. Pour pasta sauce over beef rolls and sprinkle with olives. Bring to a boil. Reduce heat to low and simmer 10-15 mins, until cooked through, turning once. Serve with orzo, and top with arugula leaves.
