Ingredients

  • 1 cantaloupe or honeydew
  • 1 small box apricot or orange jello
  • 1 cup boiling water
  • 3/4 cup cold water
  • 1 sliced banana
  • 1/2 cup sliced strawberries
  • 1 (8 1/4 oz.) can crushed pineapple, drained

Instructions

  1. Cut the cantaloupe or honeydew in half lengthwise and scoop out the seeds.
  2. Drain the seeds well and set aside.
  3. Dissolve the gelatin in the boiling water.
  4. Add the cold water to the gelatin mixture and chill until slightly thickened.
  5. Stir in the sliced banana, sliced strawberries, and drained crushed pineapple.
  6. Pour the gelatin and fruit mixture into the melon halves.
  7. Chill in the refrigerator until the gelatin is firm, about 3 hours.
  8. Cut the filled melons into wedges and serve.
