Ingredients

  • 6 egg whites
  • 1/4 tsp. salt
  • 1 1/2 c. superfine sugar
  • 1 tsp. vanilla
  • 1 pt. fresh strawberries
  • Lemon Curd

Instructions

  1. Preheat oven to 200°F (93°C).
  2. Put egg whites and salt in the bowl of a mixer.
  3. Beat until foamy.
  4. Gradually add 1 1/4 cups of sugar until incorporated.
  5. Beat until the meringue is not grainy and forms stiff peaks.
  6. Fold in the remaining 1/4 cup sugar and vanilla into the meringue.
  7. Fill a pastry bag with the mixture and pipe onto a lightly greased cookie sheet.
  8. Bake for 1 hour until the meringue cups are completely dry.
  9. Remove from the oven and transfer to a rack to cool.
  10. Fill each meringue cup with lemon curd and top with fresh strawberries.
