  • whites of 4 large eggs
  • 1/4 tsp. salt
  • 1 tsp. cream of tartar
  • 1 cup granulated sugar
  • 1 cup and 2 Tbsp. powdered sugar, sifted

  1. Beat egg whites until foamy; beat in salt and cream of tartar.
  2. Gradually add sugar a tablespoon at a time, beating continuously, then add powdered sugar.
  3. Beat until the mixture will not drop from beaters.
  4. Drop spoonfuls or pipe onto greased wax paper.
  5. Bake at 275°F for 20 minutes.
  6. Turn off oven and leave meringue shells inside for 5 minutes.
  7. Cool completely and carefully remove from pan.
