Cheesy Corn Pudding

A creamy, cheesy corn pudding with sweet corn and melted cheese, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 2 (16 oz.) cans yellow whole kernel corn, drained
  • 1/2 stick oleo, softened
  • 3 Tbsp. sugar
  • 2 eggs, slightly beaten
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 3/4 cup grated cheese
  • 2 Tbsp. cornstarch
  • liquid from corn

Instructions

  1. Dissolve the cornstarch in the liquid from the corn.
  2. Blend all ingredients well with a mixer at medium speed.
  3. Pour the mixture into an oiled casserole dish.
  4. Bake uncovered in a 375°F oven until the mixture is set and top is lightly browned.
