Tips & Substitutions

For best results, ensure your mixing bowl is completely clean and free of any grease, as even a small amount can prevent the egg whites from whipping properly. If you don't have superfine sugar, you can pulse regular granulated sugar in a blender for a few seconds. Consider adding a pinch of cream of tartar to stabilize the egg whites if desired.

Serving Suggestions

Meringue sticks are delightful on their own or paired with a light dessert like fresh berries and whipped cream. They can also be crumbled over ice cream or served alongside a cup of tea or coffee. For a fun twist, try pairing them with Methodist Punch for a festive gathering.

Storage & Reheating

Store leftover meringue sticks in an airtight container at room temperature for up to a week. Avoid refrigeration, as moisture can make them sticky. If needed, you can re-crisp them in a low oven at 200°F (93°C) for about 10 minutes, but keep a close eye to prevent browning.

Frequently Asked Questions

Why didn't my meringue form stiff peaks?

If your meringue didn't reach stiff peaks, it could be due to traces of fat in the bowl or on the whisk. Make sure all equipment is clean. Also, ensure that you added the sugar gradually, as adding it too quickly can hinder the structure. Humidity can also affect meringue, so it's best to make it on a dry day.

Can I add flavors or colors to the meringue?

Absolutely! You can incorporate food coloring or different extracts like almond or lemon to customize the flavor. Just add these ingredients after achieving stiff peaks. Be cautious with liquid flavorings, as too much moisture can affect the meringue's stability.

What should I do if my meringue cracks during baking?

Cracking can occur if the temperature is too high or if the meringue was whipped too much. Ensure you bake at a low temperature, and avoid opening the oven door while baking. If they crack, they are still delicious; just be sure to serve them in a way that highlights their texture, like alongside fresh fruits.
