Ingredients

  • 1 can cream-style corn
  • 1 cup yellow cornmeal
  • 1 cup milk
  • 1 teaspoon salt
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 pound ground meat
  • 1/2 pound Velveeta cheese
  • 1 can Ro-Tel tomatoes
  • 1 large onion

Instructions

  1. Mix the cream-style corn, yellow cornmeal, milk, salt, eggs, and baking soda in a bowl.
  2. Brown the ground meat in a skillet until fully cooked.
  3. Melt the Velveeta cheese with the Ro-Tel tomatoes in a saucepan or microwave until smooth.
  4. Layer half of the cornmeal batter in a greased baking dish.
  5. Add the cooked ground meat over the batter.
  6. Spread the cheese and Ro-Tel mixture over the meat.
  7. Sprinkle chopped onions on top.
  8. Cover with the remaining batter.
  9. Bake at 350°F (175°C) until the top is golden brown, about 45 minutes.
