Ingredients

  • white syrup
  • milk
  • bitter chocolate
  • white sugar
  • butter

Instructions

  1. Melt butter in a heavy pan.
  2. Add white syrup, milk, bitter chocolate, white sugar, and cook on medium heat.
  3. Cook until the mixture reaches 232°F on a candy thermometer (234°F in damp weather), stirring constantly.
  4. Cool until you can touch the bottom of the pan.
  5. Beat the mixture until it holds a peak.
  6. Drop spoonfuls onto waxed paper to form individual candies.
  7. Alternatively, pour into a Saran-lined pan and cut into squares.
