Ingredients

  • 1 1/2 lb. ground beef (lean)
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel tomatoes and green chilies
  • 2 cans Ranch Style beans
  • 1 small onion
  • 1 lb. Longhorn cheese
  • 1 pkg. (12) corn tortillas

Instructions

  1. Brown ground beef and onion; drain and mix in the soup and Ro-Tel tomatoes.
  2. Layer as follows:
  3. line bottom of oblong cake pan with 6 tortillas, then one can of beans (drained), 1/2 of the meat mixture and 1/2 of grated cheese.
  4. Repeat layers as above. Cook, uncovered, at 325° for 25 to 30 minutes.
