A quick and healthy vegetable medley featuring cauliflower, carrots, and broccoli, perfectly microwaved with butter or margarine for a delicious side dish suitable for any meal.

Ingredients

  • 1 head cauliflower
  • 1 lb. carrots, sliced
  • broccoli florets

Instructions

  1. Place the cauliflower head in the center of an oval microwavable platter.
  2. Arrange the broccoli florets and sliced carrots around the cauliflower nicely.
  3. Put 4 teaspoons of margarine or butter on top of the vegetables.
  4. Season with salt and pepper to taste.
  5. Cover tightly with plastic wrap and poke 2 holes in the top.
  6. Microwave on High for 17 to 19 minutes.
