Ingredients

  • 1/2 cup freshly mashed potatoes
  • 3 cups sifted confectioners sugar
  • 1 cup sweetened or unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 2 ounces sweet or unsweetened chocolate

Instructions

  1. Butter a 7-inch pie plate or similar dish.
  2. Place the mashed potatoes in a bowl and add the sifted confectioners sugar, shredded coconut, and vanilla extract.
  3. Stir with a wooden spoon until well mixed.
  4. Transfer the mixture to the buttered pan.
  5. Melt the chocolate and pour it over the top of the candy, spreading it with a buttered spatula.
  6. Place the pan in the refrigerator for 30 minutes.
  7. Before the candy sets and the chocolate hardens, score to make squares.
  8. Keep covered in the refrigerator; the candy will last 10 days.
