Ingredients

  • white squash
  • lo-fat cheese
  • salt
  • pepper
  • picante sauce

Instructions

  1. Select small white squashes no more than 4 inches across.
  2. Cut each squash in half at the scalloped edge.
  3. Place the squash halves into a shallow baking pie plate with a small amount of water.
  4. Microwave on high power until tender or easily pricked with a toothpick.
  5. Top with lo-fat cheese and picante sauce before serving if desired.
