Ingredients

  • 1 bag California Blend frozen vegetables
  • 2 cups shredded reduced fat mild Cheddar cheese
  • 2 egg whites
  • pepper to taste
  • 1 can cream of mushroom soup (Healthy Brand name)
  • 1 tablespoon chopped onions
  • 1/2 cup reduced calorie mayonnaise

Instructions

  1. Preheat oven to 350°F.
  2. Cook frozen California Blend vegetables according to package directions and let cool.
  3. In a large bowl, mix shredded Cheddar cheese, egg whites, chopped onions, cream of mushroom soup, mayonnaise, and cooled vegetables.
  4. Pour the mixture into a baking dish and spread evenly.
  5. Bake in the preheated oven for about 30 minutes until heated through and bubbly.
