Ingredients

  • 2 cups water
  • 3/4 to 1 cup milk
  • 2 Tbsp margarine
  • 1/4 tsp salt
  • 2 cups instant mashed potato flakes
  • 1/2 lb. or 8 oz. container soft-style cream cheese with chives and onion
  • margarine (optional)

Instructions

  1. In a 1 1/2-quart microwave-safe casserole dish, combine water, 3/4 cup milk, margarine, and salt.
  2. Cook, covered, on 100% power (High) for 5 to 7 minutes or until heated through.
  3. Stir to dehydrate potatoes.
  4. Stir in cream cheese.
  5. Add milk if necessary until of desired consistency.
  6. Cook, covered, on High about 1 minute or until heated through.
  7. If desired, top with margarine and chives.
