Ingredients

  • 32 oz. cranberry juice
  • 1 1/2 cup chopped, unpeeled apple
  • 2 pkg. lemon Jell-O (3 oz.)
  • 1 pkg. Knox gelatine
  • 1 1/2 cup mincemeat pie filling
  • 1 1/2 cup chopped nuts (optional)
  • 2 tsp. lemon juice

Instructions

  1. Heat 1/2 of the cranberry juice and add the lemon Jell-O, Knox gelatine, and lemon juice, stirring until dissolved.
  2. Gradually add the remaining cranberry juice and let the mixture cool until it reaches an egg white consistency.
  3. Stir in the chopped apples, mincemeat pie filling, and nuts (if using).
  4. Pour the mixture into a greased mold and refrigerate until set.
