Mini Banana Bread Loaves

Ingredients

  • 1 package (about 16 Oz. Box) Sugar-free Yellow Cake Mix
  • 1 package (Small 4-serving Size Box) Vanilla Sugar-Free Instant Pudding Mix
  • 4 whole Eggs
  • 1 cup Water
  • 1/4 cups Oil
  • 2 whole Large Bananas, Mashed
  • 1/2 cups Pecans, Chopped

Instructions

  1. Heat oven to 350°F.
  2. Beat cake mix, pudding mix, eggs, water, and oil in a large bowl with a mixer for 2 minutes or until well-blended. Add bananas and nuts, mix just until blended.
  3. Pour into 5 mini loaf pans sprayed with cooking spray.
  4. Bake 35-40 minutes or until a toothpick inserted in the centers comes out clean.
  5. Cool completely on a wire rack.
