Mini-Bite Mint Cookies

Ingredients

  • 20 hard peppermint candies
  • 1 c. all-purpose flour
  • 1 tsp. soda
  • 1/2 c. butter (at room temperature)
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla

Instructions

  1. Place 1/2 (10) of peppermint candy into bag and crush.
  2. Repeat with rest of candy (1/2 cup total).
  3. Mix flour and soda; set aside.
  4. Mix butter and sugar with mixer until blended.
  5. Add flour mixture and beat until blended.
  6. Stir in crushed candy.
  7. Drop by 1/2 teaspoonfuls.
  8. Bake 7 minutes at 350°.
  9. Remove from oven and let cool on cookie sheet for 5 minutes, then remove to rack. Yields 100 small cookies.
  10. (Good for children to make.)
