Ingredients

  • vanilla wafers
  • 3/4 cup sugar
  • 16 oz. cream cheese, softened
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 1 can cherry pie filling

Instructions

  1. Place cupcake liners in a muffin pan with one vanilla wafer in each.
  2. Cream together sugar and softened cream cheese.
  3. Add eggs; blend in lemon juice and vanilla.
  4. Pour the mixture over the wafer in each muffin liner, filling 1/2 to 2/3 full.
  5. Bake for 15 minutes at 375°F (190°C).
  6. Cool completely, then spoon 1 teaspoon of cherry pie filling on top of each mini cheesecake.
